- Stainless chrome-nickel steel 18/10 (18% chrome, 10% nickel) is the highest quality cutlery material. It withstands heavy use and food acids.
- Chrome steel 18/0 (18% chromium, 0% nickel) is cheaper. It is also magnetic, making it suitable for sorting machines.
- Chrome steel 13/0 (13% chromium, 0% nickel) is the material from which the cheapest cutlery is made. However, they also withstand restaurant use very well.
